Welcome to Bubby's Bites!
A fun new food-focused blog discussing all things edible, especially BBQ.
Hey there and happy Wednesday! Thank you for taking the time to check out our new blog! I hope that with every post you can find some value, laughter, relation, or all of the above. There is no set structure for this blog. We'll talk about BBQ, of course, but we'll also talk about other foods. We'll talk about the dreaded daily conversation of "what's for dinner?" We'll talk about small business and the challenges that go along with it. We'll even brainstorm new ideas including new products and potential collaborations. We might even get into some catering stories or tales from the pits. If any or all of that sounds like your cup of tea, then buckle up!

What's Been Cookin'
Believe me, between catering, test cooking new products, and cooking for my family, planning a menu can seem exhausting! My hope is that you can find some inspiration for your next lunch, dinner, or event.
Last week was the week of salads! We did a delicious Southwest Salad with Chipotle Chicken. I made a smoky chipotle marinade and soaked some boneless skinless chicken thighs overnight before grilling them up the next evening. I dressed the salad with a creamy citrus balsamic vinaigrette. It turned out fantastic!
We also did a Blackened Salmon Salad with a Creamy Blackberry and Sweet Corn Vinaigrette. I know, it sounds a little strange. The inspiration behind it might sound even stranger! You see, my wife's aunt and uncle own the most incredible farm to table restaurant in North Fort Myers, Florida. Not only do they have some of the freshest, most flavorful food in Southwest Florida, courtesy of her other uncle who is the chef, but they make their own ice cream. On one of our recent visits, I was introduced to blackberry and sweet corn ice cream. It was mind-blowing! It was honestly one of the best bites of ice cream I had ever tasted. If you're ever in SW Florida, do yourself a favor and check out Blossom & Brie. It's a magical place! I knew I had to recreate those flavors somehow and ice cream making is not something I've ever attempted. The vinaigrette was a success and complimented the blackened salmon really well! Chipotle Chicken Tacos on the Blackstone were also on the menu last week, using the rest of the marinated chicken thighs. I loaded them up with some pickled veggies, cilantro, and a lime crema. You couldn't even see the chicken at the end! Mmm-good!

The rest of last week was a little crazy with catering and getting ready to go back to school. We ate at the local Mexican joint one night and did frozen pizzas one night. Butch's pizza is the best! We did manage to squeeze in some smashburgers one night, seasoned with Uncle Bubby's Steakhouse Rub. So good!
This week has been complete chaos. My wife had surgery and has been down for a few days, so meals have been mostly take-out, arranged by amazing family and friends. You never truly appreciate how much your spouse does until they're out of commission for a few days! Appreciate you, dear! We'll get back to more home-cooked meals this coming week, including Italian Beef and chicken enchiladas!

Uncle Bubby's BBQ
You may have noticed that there were a couple items in that prize basket up above that you might not have seen. Uncle Bubby's Chili Seasoning is very close to being ready for official release. Just need to get the final labels made and it will be on the website to purchase. Believe it or not, fall is right around the corner and that means chili weather! There's nothing better than football and chili in the fall! Also, our Mexican Love Juice Hot Sauce should be available sometime in the next few months. It's a fairly mild hot sauce that is fabulous on tacos! Or try it on pizza. Trust us!
One of the biggest challenges we face is coming up with new content. The last thing we want is to post stuff just to post stuff. We want to add value with everything that we post. If you guys have anything content-wise that you'd like to see from our social media, let us know!

New Ideas
There are several things either in the works or in the brainstorming stage. We have some new seasonings that we're developing along with some new sauce flavors. We've contemplated doing some sort of subscription box with our products where you get a few surprise items every month or two, or maybe even choose your own. If that's something that you might be interested in, please comment or send us a message. We'd love to hear your thoughts!

Catering
If you weren't already aware, we have a sister company, 217 BBQ Company, that does BBQ catering. We have had several catering gigs the last few weeks and would love to line up more corporate catering jobs during the week. Closing Rhymes
As those of you who've ever cooked a brisket or pork butt know, you have a lot of downtime during a 12- or 14-hour cook. I like to listen to music when I'm cooking, but sometimes music just seems to create itself in my head. I make short rhyming poems out of it, and I'll share one at the end of each blog post. Here goes:
My clothes all smell of hickory smoke
A successful cook again
Busch Light running through my veins
Brisket dripping down my chin
