Hey there and happy Wednesday! Welcome to volume 6 of our blog! If you haven't had a chance to check out our first five editions of Bubby's Bites, please give them a read! Hopefully you can find some inspiration for dinner one night this week. Maybe you will learn about a new sauce or seasoning you want to try. Perhaps you are bored and looking for something to pass the next five minutes! No matter the reason, thank you for being here! I hope you enjoy volume six of Bubby's Bites!

What's Been Cookin'


As the kids start to get older and find new activities to do, the weeknights seem to get busier and busier. That makes it hard to find time for home cooked meals. We do our best, supplemented by the occasional meal out. And sometimes we do get to cook a meal but forget to take a picture in the madness! I am definitely guilty of that the last couple weeks.


Last week started off with some chicken fettucine alfredo. This was one of the things I forgot to take a picture of, but it was delicious. The homemade sauce with the grilled chicken was perfect as the weather started to cool off. One day I'll make homemade noodles, but that day was not today! The next day we took advantage of some leftover chicken and made enchiladas. Paired with some fresh salsa and chips, it's a family favorite.

The next night I tossed together a quick taco salad between kid's activities and, once again, didn't get a picture. I like to cut up fresh romaine and mix it with Monterrey jack cheese, taco meat, tortilla strips, taco sauce, Catalina dressing, and a few tomatoes. It's so easy and delicious. Thursday night I finally got to make rigatoni I'd been craving. It started with just some jarred marinara with a few ounces of cream cheese melted in, along with some Uncle Bubby's Oh My Garlic and fresh basil. We tossed the rigatoni, a totally underappreciated noodle, with the sauce and some grilled chicken. Even the kids had seconds!

That Friday I had a wedding, so it was a pizza night! The wife and I had Filippo's late because the kids were spending the night at Grandma's. Nothing better than Filippo's., Jeopardy, and a couple Busch Lights on a Friday night! Saturday, we got together with some friends and made birria tacos with leftover chopped brisket. I took some of the brisket juices and made a consommé out of it with dried chiles, garlic, onion, and cilantro. We used that to dip the tacos in. Wow! Yet another dish I could eat weekly.

We ended the week cooking for a wedding tasting. The platter at the top of the page was created that day. Didn't that look tasty? Needless to say, BBQ was on the menu that night!


This week we used some of the BBQ leftovers, Monday I made a bacon brisket melt on sourdough bread. It turned out fantastic but wasn't the most photogenic meal I'd ever created. I opted to spare you the picture! The next day, sticking with the leftover concept, I made a birria sandwich. I took sourdough focaccia from our good friend Morgan at Mo's Dough, slathered some of the chilled consommé on it, along with brisket and cheese. I considered cooking it on the panini press but just toasted it in the oven due to time constraints. The taste was phenomenal, picture wasn't the best, but I'll share it anyway!

The last home meal of the week was something I saw on TikTok awhile back. It was called Peposa, a Tuscan beef stew with a heavy black pepper and red wine sauce. I served it over mashed potatoes. I thought it was really good. The wife and kids found it a little spicy, which I agreed with. I'd probably back off the black pepper next time, but it was a success nonetheless!

Next week's goal is to take some better-quality pictures! The menu will definitely include collard greens and a twist on my mac n cheese recipe. The weather has turned cooler around here, so you'll probably see some more comfort foods start showing up in the blog. Stay tuned!

Exciting News! We will be releasing our newest seasoning next week! Uncle Bubby's Holy Jalapeno Seasoning is like a spicy cousin of our Oh My Garlic Seasoning. We've tried it on wings, pizza, pasta, and even cottage cheese! We can't wait to see what else it can be used on. Stay tuned for its release sometime next week!

Closing Rhymes


As those of you who've ever cooked a brisket or pork butt know, you have a lot of downtime during a 12- or 14-hour cook. I like to listen to music when I'm cooking, but sometimes music just seems to create itself in my head. I make short rhyming poems out of it, and I'll share one at the end of each blog post. Here goes:


Firing up the smoker is an underrated chore

Coals glow like embers on a dragon's floor

Smoke curls up, weaving BBQ dreams

Settle in your chair and laugh at some memes
