What's Been Cookin'


We have been able to make some more homemade meals the last couple weeks. The weather forecasts (and the clocks) are changing and we're in that kind of lull before the holidays.


Last week was the week of last minute, thrown together meals. We did a Salisbury Steak Pasta one night that turned out really well. As you can see in the picture, I added a hefty portion of fresh Parmesan to mine!

The next night I made a big pot of collard greens. I'd been craving collard greens for a while, so much so that I planned the meal around them. I paired them with some taco meat and rice, but the collard greens were the star of the show. It also gave me a chance to use some smoked ham hocks I had in the freezer.

The following night, using leftover taco meat, we did taco salads. Taco salad is so easy, but delicious. We also did breakfast for dinner one night, involving the usual suspects like bacon and eggs. However, I had some chorizo I needed to use. Hence, the chorizo con papa y huevos quesadilla was born! These turned out fantastic!

This week started with the Cubans I had been wanting to make for a month! I took some phenomenal Ciabatta bread from Mo's Dough, layered pulled pork, ham, mustard, Swiss cheese, and pickles, and cooked it on the panini press. So good! The knifework wasn't great, so I apologize for the picture. I assure you the taste made up for it! The fried plantains were a perfect accompaniment to the Cubans.

Friday night was homemade pizza night. The kids and wife did mini-individual pizzas with pepperoni and bacon. I decided to make a version of the viral Domino's pizza from a few months ago. I started by using a store-bought dough from Aldi that had jalapenos in it. I made a parmesan cream sauce for the base that included a substantial amount of Uncle Bubby's Oh My Garlic. After that I layered on thin sliced ribeye, bacon, jalapenos, and mozzarella. It turned out pretty good! One day I'm going to perfect a homemade pizza dough, but until then I will make do.

The final meal of the week was a Korean Pot Roast that my wife found on TikTok. The soy sauce, ginger, mushrooms, and sesame oil made for a unique Asian twist on traditional pot roast. I paired it with rice and some pickled veggies. Yum!

Next week's plan is lots of homemade meals, including blackened salmon, burrito bowls, and beef and noodles. Stay tuned!

Closing Rhymes


As those of you who've ever cooked a brisket or pork butt know, you have a lot of downtime during a 12- or 14-hour cook. I like to listen to music when I'm cooking, but sometimes music just seems to create itself in my head. I make short rhyming poems out of it, and I'll share one at the end of each blog post. Here goes:


Thin blue smoke is starting to roll

Chilly weather surrounds the pit

Between the cooler and firebox

Is the perfect place to sit
