Uncle Bubby's Spare Ribs



Things might get a little messy, but you won't care!


Makes 2-3 Servings


1 Rack of St. Louis Cut Spare Ribs

2 Tablespoons Mustard

Uncle Bubby's Pig Rub

4 Tablespoons Butter

4 Tablespoons Honey

Uncle Bubby's Sweet BBQ Sauce

Apple Juice


Remove membrane from bottom of ribs. Coat with mustard. Season liberally with Uncle Bubby's Pig Rub. Let sit for 30-45 minutes. Preheat smoker to 250 degrees. Put ribs on smoker and cook for 2.5 hours, spritzing with apple juice after an hour and 45 minutes. Lay out a large sheet of heavy duty foil and line it with half the butter and honey. Place ribs on top. Add remaining butter and honey to the top side of the ribs and sprinkle with a little more Pig Rub. Wrap tightly and put back on smoker for about an hour and 45 minutes. Carefully remove from foil and set back on the smoker for 40 minutes, brushing with Uncle Bubby's Sweet BBQ Sauce initially and again after 20 minutes. Remove from smoker and cut into individual ribs. Enjoy!
