Spice things up a bit with this delicious appetizer!
Makes 5-6 Servings
10 Jalapeno Peppers
8 oz Cream Cheese, Softened
3 oz Mexican Chorizo, cooked
Uncle Bubby's PIg Rub
1 lb Thin Sliced Bacon
Preheat smoker to 250. Using gloves, cut the top off each pepper and cut in half lengthwise. Remove seeds and set aside. Mix cream cheese and chorizo in small bowl. Stuff each jalapeno half with cream cheese mixture and wrap with a slice of bacon. Secure with toothpick. Sprinkle with Pig Rub. Cook on smoker for about 2 hours or until the bacon is crispy. Enjoy!
