Our famously delicious BBQ Smoked Pork Shots
1 lb Smoked Sausage
1 lb Bacon
1/2 Cup Light Brown Sugar
1 Tablespoon Uncle Bubby's Pig Rub
Uncle Bubby's Sweet Sauce
Directions:
Mix brown sugar with Pig Rub and set aside. Cut sausage into 3/4" pieces. Wrap one slice of bacon around each piece of sausage, ensuring that the bacon is higher on one end, and secure with a toothpick. This should form what looks like a cup, or small shot glass. Add about 1/2 teaspoon of BBQ Sauce to the inside of the "cup" and fill the rest of the way with the brown sugar mixture. Smoke for about 2 hours at 225 degrees or until the bacon is done and the brown sugar mixture has liquified. Keep "shots" upright to avoid losing that delicious mixture. Let cool 5 minutes and enjoy!
