Lemon Ricotta Pasta w/ Chicken

16 oz pasta

15 oz part skim ricotta

Zest and juice of 2 lemons

2 tablespoons Uncle Bubby’s Oh My Garlic

1.25 lbs chicken breast, seasoned w/ lemon pepper seasoning

2 cups baby spinach

2 tablespoons grated Parmesan

1 tablespoon olive oil or butter


Mix ricotta, Parmesan, lemon juice, lemon zest, and oh my garlic to a medium bowl. Mix well and set aside. Cook chicken on grill or in a skillet until cooked through. Set aside and keep warm. Boil water in large pot and add good amount of salt. Cook pasta according to directions. Strain pasta, reserving 1 cup of pasta water, and set aside. Add oil or butter to pan over medium heat. Add spinach and sauté for 2-3 min or until cooked down. Turn heat to low. Add ricotta mixture and stir to combine. Add pasta and 1/4 cup pasta water at a time until desired consistency. Top with sliced chicken. Get fancy and garnish with a lemon slice and a couple basil leaves lol. Enjoy!
