Think Mexican street corn, but in a skillet!

2 cups frozen corn

1 tablespoon melted butter

5 oz. diced green chiles

¼ cup mayo

¼ cup cotija cheese

2 tablespoons sour cream

1 tablespoon Uncle Bubby’s Tex-Mex Blend

Juice and zest of 1 Lime

Mix corn, butter, chiles, mayo, sour cream, lime juice and zest and half of the Tex-Mex Blend. Add to cast iron skillet or casserole dish. Bake at 350 for 20 minutes or until heated through. Top with remaining Tex-Mex Blend, cilantro and cotija. Serve with tortilla chips. Enjoy!
