Breakfast Quesadillas

These quesadillas are easily customizable and quick to put together. Plus, the recipe can easily be doubled or tripled to feed a crowd.

4 soft taco size flour tortillas

6 eggs, scrambled

1 cup Mexican shredded cheese

2 cups cooked meat (chorizo, bacon, ham, sausage, etc…)


Uncle Bubby’s Tex-Mex Blend

Spray a griddle or large skillet with cooking spray and heat to medium. Add a tortilla and fill with ¼ of the eggs, ¼ of the meat, ¼ cup of cheese, a spoonful of salsa and season well with Uncle Bubby’s Tex-Mex Blend. Fold in half and cook until brown, then flip over and finish cooking the top side. Cut into 3 pieces and serve with fruit. Enjoy!
