Hey there and happy Wednesday! I can't believe this is already the fourth installment of our blog! If you haven't had a chance to check out our first three editions of Bubby's Bites, please give them a read! Hopefully you can find some inspiration for dinner one night this week. Maybe you will learn about a new sauce or seasoning you want to try. Perhaps someone told you about it and suggested you check it out. No matter the reason, thank you for being here! I hope you enjoy volume four of Bubby's Bites!

What's Been Cookin'
I keep telling myself that things will slow down and we can stop eating out so much. I think I'm telling myself lies! We spent my birthday weekend in St Louis and the following weekend at the Illini Homecoming game. The weekdays were crazy too! We did manage to squeeze in a few homecooked meals, however.
We made sloppy joes and tater tots one night, which are a big hit around our house. The kids and I like a slice of American cheese on top of our sloppy joes, but my wife thinks that's crazy. Do any of you add American cheese to your sloppy joes? We had leftover sloppy joe mix, so the next day I made sloppy joe stuffed sweet potatoes. Those were so good! I topped them with shredded cheese and some leftover pepperoncini ranch. 10/10 will eat again!
The next night, we had some hot honey chicken and broccoli. I forgot to get a picture of it, but it was very good as well. I will definitely get a picture of it next time! We ended the week with yet another trip to the Mexican joint in town for some tacos and margaritas. That weekend was our St Louis trip. We went to the Cardinal's game and spent some time in ballpark village. We had some typical ballpark fare (hot dogs) and some not so typical ballpark fare (corned beef sandwich). Before coming home the next morning, we had a delicious brunch at Egg. I had the carnitas hash with poached eggs and cornbread. It had a serious kick, but it was terrific!

For my birthday dinner, we had pizza from Papa Del's. I love the stuffed pizza, but the thin crust is even better in my opinion. Especially with sausage!
This week was just as crazy and only offered a couple homemade meals. I made a BBQ chicken salad one night with some BBQ ranch dressing. It was nothing fancy, just bottled ranch mixed with Uncle Bubby's Sweet BBQ Sauce, but it was a huge hit with my daughter! She swore that it tasted like Yum Yum sauce you would get at the hibachi restaurant. My wife decided to have a garage sale this week, and I had a small catering job, so we had a few easy dinners. We did manage to sell a few bottles of sauce and rub at the garage sale! Jimmy Johns came through that night, and we hit up the actual Hibachi restaurant one night as well.
Also, we went with friends to the U of I homecoming game this week. We celebrated a thrilling game with a few hot dogs and a few adult beverages! We chose Texas Roadhouse for dinner that night and it did not disappoint. On Sunday we finally were able to try out the new sourdough pizza crust we got from our good friend, Mo's Dough. I had some tomatoes from the garden and made a nice fresh pizza sauce. I wanted to keep it fairly simple, so we had a meatball margherita pizza. OMG, the sourdough crust was so heavenly! It was light, airy, and perfect. Of course, I added a burst of flavor with Uncle Bubby's Pizza Seasoning!

Next week should be a little calmer. I know I want to use the rest of the pizza sauce and maybe do strombolis one night. We're also due for a steak night. We'll see what else we can come up with before the next edition!

Uncle Bubby's BBQ
Well, the cat's out of the bag about the surprise I alluded to in the last edition of Bubby's Bites! I was asked to be on Let's Dish, a new local cooking show on the WCIA+ app. I made brisket chili with cornbread, and besides trying to smoke out the whole studio, it was fantastic experience! You can check it out on Apple TV, ROKU TV, Amazon TV, or Kindle Fire Stick by downloading the WCIA+ app.
I also had a fun photo shoot with Cinder and Gold Photography. We did a couple headshots, but it was mostly product photos. I hope to be able to share all of them with you soon. We took some really fun pictures! Below is a little sneak peek.

Random Garage Sale Finds!
As you know, I enjoy taking food photos. Look at this cool serving board I found at a garage sale for $2! You never know what kind of treasures you'll find! I can't wait to put it to work.

Don't forget that we cater as well! We would love to line up more corporate catering jobs during the week. Also, it's not too early to start planning holiday parties! Closing Rhymes
As those of you who've ever cooked a brisket or pork butt know, you have a lot of downtime during a 12- or 14-hour cook. I like to listen to music when I'm cooking, but sometimes music just seems to create itself in my head. I make short rhyming poems out of it, and I'll share one at the end of each blog post. Here goes:
They put me on a cooking show
You'll do fine they say
I slayed the brisket chili
But why's my voice sound that way?
