Reverse Seared Tri-Tip

For you steak fans! If you haven't tried tri-tip, you're missing out!


2-3 lb Tri-Tip

Uncle Bubby's Cow Rub


Season the meat liberally with the Cow Rub and let rest at room temp for 30 minutes. In the meantime, fire up your smoker to 275. Place tri-tip on smoker and cook about an hour or until the internal temp gets to 125. Next, sear over high heat for about 2 minutes per side, just long enough to sear the outside and make grill marks. Remove from smoker and cover. Let rest for 10-15 minutes before slicing. Keep in mind the grain direction changes towards the thicker end of the cut. Slice similar to the picture below. Enjoy!
