What better way to celebrate a holiday than with prime rib!
5.5 lb bone-in prime rib
rendered beef tallow
2 tablespoons Uncle Bubby's Cow Rub
1 tablespoon garlic powder
2 teaspoons rosemary
Preheat smoker to 225. Lather up prime rib with some rendered beef tallow. Season liberally with Cow Rub, garlic and rosemary. Smoke for about 4 hours, or until internal temp hits 130. Let rest for at least 20 minutes before slicing. Enjoy!
